Ingredients
Olive oil – 1 Tbsp.
Small yellow onion – 1, thinly sliced
Garlic cloves – 6, crushed
Kale – 1 (10 ounce) bag
Homemade chicken broth – 1 ½ cups
Fresh lemon juice – 2 Tbsp.
Erythritol – 1 Tbsp.
Crushed red pepper flakes – 1 tsp.
Salt and freshly ground black pepper to taste
Method
Add oil in the Instant Pot and press Sauté.
Add the onion and cook for 3 to 4 minutes.
Add the garlic and cook for 1 minute.
Press Cancel and stir in remaining ingredients.
Cover and lock the lid. Press Manual and cook under High for 5 minutes.
Press Cancel and do a quick release.
Remove the lid and serve.
