Ingredients
Medium avocado – 1, pitted and cubed
Eggs – 2 large, beaten
Green onions – 2 Tbsp. finely chopped
Olive oil – 1 tsp.
Butter – 1 Tbsp.
Sea salt – ½ tsp.
Black pepper – ¼ tsp. ground
Red chili flakes – ¼ tsp.
Method
Melt the butter in the Instant Pot.
Press the Sauté button and add avocado cubes. Season with salt and pepper and cook for 3 to 4 minutes. Stirring occasionally.
Now, add the green onions, eggs, and olive oil to taste. Add 2 Tbsp. of milk for a creamier texture.
Cook until the eggs are set, about 3 minutes.
Press Cancel to turn off the pot.
Transfer the dish to the serving plate.
Top with heavy cream and serve.
